Easy Microwave Hollandaise Sauce

“Easy and the best hollandaise sauce I’ve ever tasted, bar none.”

  • ¼ lb. butter
  • juice of one lemon (or more)
  • 3 egg yolks

Mix together in a 2-cup measuring cup or a small microwave safe bowl.

Cook in microwave on high 1 to 2 minutes, stirring every 15 seconds until thickened.

Serve over vegetables (especially asparagus) or chicken.

 

Steak Marinade

“I like to soak our steaks two days or more and it makes them so tender!”

  • ½ cup vegetable oil
  • 1/3 cup lemon juice
  • 1/3 cup ketchup
  • 4 to 5 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons butter
  • 2 teaspoons garlic powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • dash of hot pepper sauce, optional

Melt butter; add rest of ingredients. Soak meat overnight or for 24 hours. Grill.

This can also be used for pork chops.

 

Marinade for Grilled Beef

“I use London broil or sirloin tip steak.”

  • ½ cup Wesson oil
  • ½ cup red wine vinegar
  • 2 tablespoons A1 steak sauce
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon sugar

Combine and pour over beef. Cover and refrigerate several hours. Cook beef on grill and use as a basting sauce.

 

Oven Barbecue

“Good for chicken, also pulled chicken breast in the crock pot.”

  • ½ cup finely chopped onion
  • ¾ cup bottles chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon yellow mustard
  • ½ teaspoon horseradish
  • ¼ teaspoon crushed red pepper
  • 2 tablespoons honey

Combine ingredients and heat through. Pour over chicken and bake.

Note: Make extra to pass at the table!

 

Sweet-Spicy Mustard Marinade

  • 2 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/3 cup yellow mustard
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons dark brown sugar
  • 3 tablespoons 100% pure honey
  • ¼ teaspoon ground cayenne pepper

In a small saucepan, heat oil over medium heat; add garlic and cook 30 seconds or until fragrant, stirring frequently. Whisk in mustard, vinegar, sugar, honey and pepper; cook 2 minutes or until sugar and honey dissolve, stirring frequently. Transfer to a large bowl; cool completely.

This is a good marinade for chicken – marinate for a few hours or overnight.
